Environmentally Friendly: The finest quality coffee is grown at high altitudes above 4,000 ft. in areas rich in biological diversity and irresponsible coffee production can have an enormous impact. However, when grown in an environmentally sensitive manner, it can be a powerful tool for conserving biodiversity. These farmers strive to cultivate coffee with minimal impact on surrounding ecosystems. By adopting better growing practices and improving coffee quality, these farmers are improving their standard of living while protecting the rich variety of life found in its coffee region. To process coffee, the producers must remove the coffee bean from the cherry or fruit, a process that requires a large quantity of water and produces a residual cherry “pulp” that can contaminate local streams and deteriorate the habitat of aquatic plants and animals. Café Amistad’s pulp is recycled into organic fertilizer for the farmers and, last year, replaced the wood-burning bean dryers with state of the art equipment that uses only the skins, or parchment, from the coffee beans, saving 150 acres of trees annually. Shade Grown: Partial shading of the coffee plants not only produces a more flavorful coffee, but also provides a biologically diverse habitat for migratory birds and other wildlife. The presence of trees on the farms reduces soil erosion from tropical rain and allows the soil to retain high levels of nutrients and moisture. While it is sometimes necessary to trim back shade trees on new fields or to reduce moisture and the resultant use of fungicides, the farmers are committed to using a significant amount of shade trees to provide shelter for migratory birds and other wildlife that also controls the insects.
